Sharp kitchen knives have been an illusive quarry for me. There was a great commercial kitchen sharpener in Baltimore, but now I live in Colorado. Sent them to an operation in Connecticut, and it took months and the knives were not sharp. Bought those Japanese stones that cost a lot, required soaking, and despite hours of arduous work, still couldn't replicate what I got from the old Grinding Company of America in Baltimore.
With trepidation I ordered your paper wheels. I now feel that I can stop thinking about sharpening. That part of my life is taken care of.
